Napoli Style Sautéed Escarole

Escarole by itself not cooked is slightly bitter in taste, but sautéed in this fashion tames its natural bitter flavor. The olives red pepper flakes and olive oil give this green a wonderful savory flavor. Escarole is a great source of dietary fiber and also a good source of vitamin E, C, A, Calcium and Iron.
